Title: Basic White Bread - Zoji
Categories: Breadmaker
Yield: 1 Loaf

1 1/4cButtermilk; or milk
2tbButter; or margarine
2tbSugar
1tsSalt
3cBread flour; 12 oz
1pkActive dry yeast; or fast rise yeast

Into baking pan measure milk, butter, sugar, salt and flour. Sprinkle yeast over flour. Insert pan securely into unit; close lid. Select "Basic White Bread" setting if using active dry yeast or "Quick Baking" setting if using fast-rise yeast. Press "Medium" for baking degree setting. Then press "Start." The "Complete" light will flash when bread is done. When you use "Quick Baking" setting, the baking degree will be set automatically to "Medium," and does not show on the display panel.

Using hotpads, remove pan from unit; pull out kneading rod. Turn bread out onto cooling rack. Cool before slicing. Makes 1 loaf. When you use "Timer" or "Memory Timer" in baking white bread, substitute water and 3 tablespoons of dry milk instead of buttermilk or homogenized milk for food safety reasons. Dry milk should be added over bread flour.

JOYCE'S NOTE: I always make with fresh buttermilk, light margarine, 2 tsp. of Red Star active dry yeast, and bake on the "Light" setting of the "Basic White Bread setting.
